APPLE TRIFLE
Serves 1

  • 60g granny smith apple
  • pinch of all spice and pinch of cinnamon
  • 1/2 tsp sugar
  • 1 tbs berry low fat yoghurt
  • ½ tsp lemon juice
  • 1/2 tsp berry jam
  • 1/4 cup of water
  1. Peel, core and chop apple. Add water to saucepan with apple and sugar. Cook until tender. Add lemon juice, cool and mash.
  2. Combine breadcrumbs and spices. Brown crumb mixture in non stick pan.
  3. In glass dish assemble trifle.
  4. Layer half of the crumb mixture in the base of bowl.
  5. Add apple sauce and then yoghurt in layers.
  6. Add remaining breadcrumbs on top.
  7. Cover and chill in refrigerator
  8. Drizzle melted jam over trifle.
